So I was looking through my recipe collection after I made this rice salad for dinner and I found this recipe. I had it in that same spot as before, but didn’t see it. I decided to take a look at it and found that it was much healthier than I thought. It’s packed with protein and fiber, and it’s only about a spoonful of rice per serving.
