Deborah Mackey is one of those women who has a real knack for creating dishes and recipes that not only make the most of what’s already in your kitchen, but also create a unique combination of flavors that you can’t get any other way. A native to the Central Coast of California, Deborah has been producing fine food for over a decade, making her a household name in her own right.
Mackey’s new book, Eat With Deborah, is something I’ve fallen in love with. The book is basically a cookbook of all her recipes, which includes some of my favorites, including her Blueberry Lemonade. The recipes are in what seems to be a nice balance of step by step so that you can pretty much figure out what is going into the dish.
Like many people that grow up eating mac and cheese, I grew up with it, but I never thought I would love it. I was never a big fan of the cheesiness of the stuff. The cheesiness of the stuff was always accompanied by a ton of fat that seemed to come out of every dish. I didn’t think I would love anything about it.
Mackey says she’s trying to create an “un-cheesy,” but cheese-y, version of mac and cheese. I think I like it. It is a little un-cheesy, but that’s OK because it is also hearty, which is what mac and cheese is meant to be. I don’t mind the fat. I think the fat is good. I’m sure it’ll come out when I’m done eating it.
